In praise of the lowly pumpkin

Cheerful Pumpkin by Teo

What an amazing vegetable! So simple and undemanding to grow, and such an enormous bounty it offers. Alone, it hasn’t got so much flavor, perhaps that is what is so great about it. You can use it for every course of a meal. There are pumpkin appetizers, sweet or savory soups, filled or stuffed pumpkin main meals and of course the glorious pumpkin pies. World over, one finds delicious ethnic pumpkin recipes, which each culture honors. Here are a few of our favorites Pumpkin Jollof, Pumpkin Spice Bread and Spicy Pumpkin Soup.
