We spread this on our bread at evening meals and on our breakfast whole wheat rolls.
- 1/2 cup pistachios
- 1& 1/2 cups frozen peas, thawed
- 1 tbs. olive oil
- 3/4 tsp. salt
- 3/4 tsp. curry powder
- 1/4 tsp. cayenne pepper
- 1/4 cup water
- 1 tbs. lemon juice
- Shell the pistachios.
- Place the thawed peas in a food processor.
- Add all of the ingredients and puree.
- Transfer to a 1-quart (1 liter) saucepan and gently heat until thoroughly warmed.
This bright green spread also makes a great dip for vegetables.
