This soup can be served either warm or cold.

Ingredients:

  • 3 large avocados
  • 3 tblsp lemon juice
  • 3 cups good vegetable bouillon
  • 1/4 cups soy cream (Alpro Cuisine for example)
  • 1/2 tsp black pepper
  • (salt)

Directions:

  1. Puree the avocados with lemon juice, vegetable bouillon and soy cream.
  2. Add black pepper to taste (and a hint of salt if needed).
