Quick and delicious!

Ingredients:

  • 0,5 cup brown lentils
  • 0,5 cup quinoa
  • 1 small red onion, finely chopped
  • 3 tomatoes, chopped and seeds removed
  • A handful of fresh lemon balm

Dressing:

  • 0,25 cup canola oil
  • 1 tblsp lemon juice
  • 1,5 tsp curry powder
  • 1 tsp lime pepper
  • 0,5 tsp black pepper
  • 1 tsp fresh, grated ginger

Directions:

  1. Cook the lentils and quinoa (if you like, cook them in vegetable bouillon to get more flavor)
  2. Mix the dressing ingredients
  3. Mix all ingredients to cooked quinoa and lentils.
  4. Garnish with chopped lemon balm
