Mixed salad with poppy seed dressing
We enjoy a mixed salad every evening with various ingredients, but it is the salad dressing is that makes this special.
Serving Size: 2
Ingredients:
- 1 tablespoon sesame seeds
- 1/2 tablespoon poppy seeds
- 1/4 cup sugar
- 1/4 cup olive oil
- 1/8 cup raspberry vinegar
- 1/8 teaspoon paprika
- 1/8 teaspoon soy sauce or tamari
- 1/2 tablespoon onion, minced
- 2 teaspoons mustard
- pinch of salt (optional)
for the salad:
- 100 grams mixed greens
- 2 Tbs. sun-dried tomatoes
- 2 Tbs. green olives
- cherry tomatoes, sliced in half
Directions:
Mix together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, mustard, soy sauce and onion. Cover, and chill for one hour.
Notes:
The cherry tomatoes are a new variety, they are yellow and considered to be “extra sweet”. We enjoyed them, and will be saving sow seed to try to grow our own.
