We harvested eggplants from the garden today and enjoyed this tasty recipe that we found at “Garlic and Ginger”.

Briam (Greek Aubergine Casserole)

It’s a very tasty casserole and easy to make. As she says, the secret is to cook it long and slow and use a really good olive oil.
We had nice wholegrain rolls to sop up the juices and enjoyed a big mixed salad with it as well.
