This is our first year to grow yellow beets in our garden. We found some very nice recipes featuring yellow beets that we are looking forward to trying. This was the first recipe and we really enjoyed the salad and the beets.

Yellow Beets with Walnuts

Susan of the Well Seasoned Cook adapted this recipe that she found at Epicuriuos. The beets have a great flavor, with a tinge of garlic. I really liked preparing the beets this way. It was very easy to remove the skins, and yet I did not have to “fire up” the oven, as it was a very warm day today. The salad dressing is also very nice. I did add a splash of agave syrup to the dressing to offset the vinegar. We’re looking forward to more yellow beet recipes, and will have this one again for sure.
