We really enjoyed a vegan adapted version of this tasty soup by Dorie Greenspan on Thanksgiving. What a lovely combination the celery root, chestnuts and apples make.

Chestnut, Celery Root and Apple Soup

We used vegetable bouillon to make the soup, and at the end soy cream. Otherwise, it was made according to the recipe. It’s a filling hearty soup with a gently sweetness from the apples, perfect for a chilly autumn day.
