This was a delicious meal we enjoyed last night. It also makes a great snack.

Corn, pea and potato patties with herbed soy yogurt sauce

Serving Size: 10

Ingredients:

for the patties:

  • 8 ounces frozen peas, thawed
  • 4-6 ounces canned or frozen corn
  • 1 ½ lb. potatoes
  • 3 small onions
  • 1 egg replacement
  • 3-5 tablespoons flour
  • dash nutmeg
  • salt and pepper to taste
  • oil for frying the patties

for the sauce:

  • 1 cup soy yogurt
  • 1/2 lemon, juiced
  • small splash Tabasco
  • chopped chives
  • chopped parsley
  • chopped basil
  • chopped cilantro or coriander
  • salt and pepper to taste

Herbed soy yogurt sauce

Directions:

  1. Peel the potatoes and grate.
  2. Place the grated potatoes in a sieve and squeeze as much liquid out as possible.
  3. Place the grated potato in a large bowl.
  4. Add the thawed peas.
  5. Add the corn.
  6. Chop the onions and add to the mixture.
  7. Add 1 egg replacement and 3 tablespoons of flour.
  8. Gently mix. If it is still to liquid add a bit more flour.
  9. Season to taste with salt and pepper and a dash of nutmeg is very nice.
  10. Prepare the sauce by mixing the ingredients together.
  11. Keep the sauce cold in the fridge.
  12. Heat some oil ion a large frying pan.
  13. Form the patties and place in the frying pan.
  14. Cook the patties until golden brown on both sides.
  15. Serve the hot patties with the sauce.
