This is a delicious recipe from the famous Heidi Swanson of the 101 cookbooks blog. The recipe calls for yellow split peas. As beans and legumes are being featured as super healthy foods, we have been expanding the variety of ones we usually enjoy to include lesser known ones, such as the yellow split peas.

This was a delicious salad and we especially enjoyed the pepita/cilantro dressing. The only thing we did to make it vegan was to change the Parmesan cheese to nutritional yeast.
