Review: Zucchini-Banana Bread

There are many many vegan zucchini bread recipes out there. You can choose from any of the hundreds, but I really like Isa’s at The Post Punk Kitchen for many reasons.

Zucchini Bread

I prefer to make just one bread, and don’t always trust the halving of recipes to function so well. I also prefer the applesauce over flax eggs in most baking recipes. As we have a big walnut tree out back, I add walnuts, and in fact a few more than the 1/2 cup called for. Isa uses a bit less sugar than other recipes, as there is a banana and apple sauce in it and she uses a bit less oil. Every time I have made this recipe, it has come out perfect. It’s a simple recipe using ingredients that are always in the pantry.
I do prefer a bit more cinnamon and allspice, so I up the amount just a bit, otherwise, I do follow the recipe and instructions.
