Creamy shiitake and spinach crepes
Savory crepes are a great meal for a supper or a brunch. The Chick Pea Crepes offered by Delicious t.v. are great. They’re quick and easy to make and surprisingly don’t use soy.

Ingredients:
For the creamy sauce:
- 1 – 1&1/2 cups plain soy milk
- 1 vegetable bouillon cube
- 1 tablespoon corn starch
- splash of white wine
- Italian herb mixture
- dash nutmeg
- salt and pepper to taste
For the filling:
- 100 grams shiitake mushrooms
- 1 tablespoon oil
- 200 grams fresh spinach
- 1 tablespoon oil
- 1/2 onion, minced
- 2 cloves garlic, minced

Directions:
- The batter for the crepes can be made ahead of time, and left to rest.
- Meanwhile, make the cream sauce.
- Place the soy milk in a sauce pan.
- Add the corn starch and stir well to blend.
- Add the vegetable bouillon cube and heat the mixture to low soft boil.
- Stir the mixture well as it becomes thick.
- Add a splash of white wine and season to taste with salt and pepper and a dash of nutmeg.
- Prepare the shiitake mushrooms. Slice them thinly.
- Heat 1 tablespoon of oil in a small frying pan.
- Add the shiitakes and saute until soft.
- Prepare the spinach, wash well and spin dry.
- Place 1 tablespoon of oil in a frying pan.
- Heat the pan, when the oil is hot, add the minced onions and garlic.
- Only allow to cook enough to release the aromas, you don’t want the garlic to brown.
- Add the spinach and quickly turn over, it only takses a minute to wilt.
- Stir well so that the spinach, onion and garlic are mixed well.
- Make the crepes. You can keep them warm by placing them on a plate and covering with aluminum foil, and putting them in a warm oven.
To assemble the crepes:
Place a crepe on the plate, put a generous amount of mushrooms on one half of the crepe, layer a nice amount of cream sauce on top, and fold the other half of the crepe over on top. Do the same with the spinach mixture. Serve 2 or 3 nice crepes per person.
