It is a delicious soup and very easy to adapt to be vegan. Just replace the butter with vegan margarine, and use either soy cream or soy yogurt instead of the creme freche. We used fresh organic apple juice instead of the cider, but the cider would also be tasty. It’s quite important to use the spice “ras-el-hanout”.
