Review: Rosemary Marinated Puy Lentil and Sweet Pepper Salad
We doubled the amount so there was enough for the two of us. I made it the day before so that it could marinate and infuse with flavor overnight. The recipe calls for Le Puy lentils, which I did use, however I think this would also be good with the regular brown or green lentils. The only thing we did differently was to lightly saute the peppers because often raw peppers don’t sit well with my stomach, but slightly sauteed or roasted are fine. The dressing/marinade is very tasty.
