Miriam of the mouthwatering vegan food blog had posted this delicious recipe back in 2011. I’ve been meaning to get around to making a vegan chocolate cheesecake for a long time. I was very pleased with this recipe.

Chocolate Cheesecake with Cranberry Coulis

It does not taste at all “tofu-ish” and did not have that “grainy” consistency that some tofu cheesecakes have. The crust is also delicious and matched the cheesecake well. It is an easy recipe to make and comes together quite quickly, although important to chill overnight so it can set. As this was a holiday season treat, we used a sweet cranberry coulis rather than the chocolate shavings of her recipe.
