Rice and Pea Salad


  • 1 cup rice, cooked
  • 1 cup frozen peas, thawed
  • 1/4 cup soy yogurt
  • salt & pepper
  • 1/2 tsp. curry


  1. Cook the rice until fluffy.
  2. Cool the rice and add the thawed peas.
  3. Make a sauce using the soy yogurt and curry with a dash of salt and pepper.
  4. Pour over the rice and peas and chill.
  5. Serve garnished with tomatoes or can be used as stuffing for tomatoes.
  6. Optionally, water chestnuts cut into small pieces add a nice crunchiness to this salad as do apple pieces.
