Well, this is so easy, I don’t feel right calling it a recipe. But often people forget about simple things. This is a really nice refreshing salad.

Tomato & Onion Salad

Serving Size: 2

Ingredients:

  • 4-6 tomatoes, chopped
  • 1 red onion, minced
  • salt and pepper to taste

Directions:

  1. Wash the tomatoes and chop them into small pieces. I discard many of the seeds while I’m chopping, but allow some also as well as the juices.
  2. Often I use a red onion, other times it’s just a regular white one. Mince it finely.
  3. Add the onion to the tomato.
  4. Season to taste with a bit of salt and pepper.
  5. Allow it to sit for a while to season, and that’s it.
