Review: Potted giant beans with mixed vegetables
We found a new food blog that we quite enjoy: Amateur cook professional eater. Even though the recipes are not vegan, there are many that are, and most are quite healthy as well. It’s a Greek food blog. Often simple folk recipes are vegan, or at least easy to adapt. The Greeks are really god cooks, often using simple ingredients and wholesome herbs as seasonings. We came across this recipe for giant beans. They are similar to Great Northern beans.
The recipe is delicious, and interesting, using onion, leeks and spring onions as well as some garlic and a yellow bell pepper. As with may Greek recipes, dill is the herb of choice.
This was easy to make and very tasty. It makes a good winter/early spring meal We will definitely have this more often.
