Tomato and Avocado Salsa Bruschetta

These make a great lunch, a good sack or lovely finger foods for a party. It’s a quick and easy recipe that is tasty anytime of the day.
Tomato and Avocado Salsa Bruschetta

Yield: 12 slices


  • 1 baguette
  • 2-3 tablespoons olive oil
  • 3-4 medium tomatoes
  • 2 avocados
  • 1 small onion
  • splash lemon juice
  • salt and pepper
  • vegan cream cheese
  • fresh mixed sprouts to garnish

Tomato and Avocado Salsa Bruschetta

  1. Slice the baguette.
  2. Brush both sides of the slices with olive oil and toast or grill.
  3. When the baguette slices are toasted, remove from the heat.
  4. Meanwhile, make the avocado and tomato salsa.
  5. Chop the tomatoes in small pieces and place in a bowl.
  6. Chop the onion into small pieces and add to the tomato pieces.
  7. Peel the avocado and cut into small pieces and add to the tomato and lions.
  8. Season with a splash of lemon juice, salt and pepper to taste.
  9. Spread the vegan cream cheese on every slice of toasted baguette.
  10. Add a tablespoon of tomato avocado salsa and top with some fresh mixed sprouts.

    This is the first vegan meal (I left out the cream cheese) that I have made, besides the super-easy fruit smoothies I already knew how to make. It’s only day two as a vegan and food tastes better than anything I’ve ever had before!
