Orange waffles with orange sauce
The taste of sunshine – orange waffles with orange sauce. Lovely on a Sunday morning.

Yield: 6 waffles
Ingredients:
for the waffles:
- 1 Tbs. dry yeast
- 1 cup freshly squeezed orange juice warmed (about 120 Degrees)
- 1/2 cup soy, rice or coconut milk at room temperature
- 1 Tbs. oil
- 1 tsp. vanilla extract
- 1 Tbs. orange zest
- 1/2 tsp. nutmeg
- 1/4 tsp. cardamom, ground
- 1/2 tsp. salt
- pinch sugar
- 2 1/4 cups whole wheat pastry flour
- 1 tsp. baking powder
for the orange sauce
- 1/2 cup granulated sugar
- 1 Tbs. cornstarch
- salt
- 1 tsp. allspice
- 1/2 tsp. ground cardamom
- 1/2 cup boiling water
- 1 cup orange juice
- 1 tbs. soy margarine

Directions:
for the waffles:
- Dissolve yeast in warm orange juice and let sit for 10 minutes.
- Add remaining ingredients and stir well for several minutes.
- Let batter rest covered, in a warm spot for 30 minutes.
- Heat waffle iron, pour in the appropriate amount of batter for your specific model, and spread to the edges of the waffle iron.
- Close and cook until gently browned.
for the orange sauce
- In a small saucepan, combine sugar, cornstarch, and salt; stir to blend well.
- Add the boiling water and cook, stirring, over medium-high heat until thickened and clear.
- Add orange juice concentrate and bring back to the boil.
- Remove from heat and stir in butter.
- Makes about 1 cup of orange sauce.
