This is really a tasty meal and full of healthy ingredients. We enjoyed the meal with crusty wholegrain bread. It would also be delicious with tabbouleh or a big leafy green salad.

Gratin of Cauliflower, Tomatoes, Vegan Chicken and Quinoa

Ingredients

  • 16 ounces prepared vegan “chicken” pieces
  • 1 medium head cauliflower,
  • 2 medium tomatoes
  • 1 (14 ounce) can crushed tomatoes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup dry quinoa
  • 2 cups water
  • ¼ cup nutritional Yeast
  • 1 cup non-dairy cheese, shredded
  • 3 tablespoons Italian herbs, divided
  • 1 teaspoon salt, divided
  • 1 teaspoon pepper

Directions

  1. Wash the quinoa in cold running water (in a sieve).
  2. Place the washed quinoa in sauce pan.
  3. Add the 2 cups of water and a pinch of salt.
  4. Bring the quinoa to a boil, then turn down to simmer. when most of the liquid has cooked away, and the quinoa is plump and soft, remove from the heat and place a lid on the pan to allow the quinoa to further swell.
  5. Cut the cauliflower in bite sized pieces and florets.
  6. Wash the tomatoes and slice 1 in half moon shapes.
  7. Chop the onion.
  8. Mince the garlic.
  9. Oil an oven-proof casserole dish or pan.
  10. Pre-heat the oven to 450℉/235℃
  11. Place the cauliflower pieces, onions and garlic in the casserole dish.
  12. Pour the can of crushed tomatoes over the top. Add 2 tablespoons of Italian herbs and1/2 teaspoon of salt and 1 teaspoon of pepper.
  13. Mix the ingredients and place in the preheated oven to bake for 20 minutes.
  14. While the casserole is baking, drain any excess liquid from the quinoa.
  15. Add the nutritional yeast, 1/2 teaspoon of salt and 1 tablespoon of Italian herbs.
  16. Mix well.
  17. Add the cup of shredded non-dairy cheese and mix again.
  18. Slice the other tomato.
  19. Remove the casserole from the oven.
  20. Add the prepared vegan chicken pieces, nestling the pieces down in the cauliflower tomato mixture.
  21. Spread the quinoa cheese mixture on top of the cauliflower mixture.
  22. Lay the tomato slices on top of the quinoa and place the casserole back in the oven to bake for 10 minutes to melt the non-dairy cheese and warm the tomato slices.
