Curried Seitan with Apple Pieces
The apples in this mild curry give a nice texture and a slightly sweet hint.

Ingredients:
- 12 oz. seitan pieces
- 1 pkg. fresh mushrooms, quartered
- 3 Tbs. oil
- 3 Tbs. mixed curry powder
- 1/2 tsp. cumin
- 1 cup white wine
- 1 Tbs. flour
- 1 spring onions
- 1 red bell pepper, in fine thin slices
- 3-4 tart apples, cut in pieces
- 1 & 1/2 cups plain soy yogurt
Directions:
- Heat the oil in a large frying pan.
- Saute the red bell pepper slices and remove from the pan when soft.
- Put the seitan pieces in the oil and begin to saute them.
- Add the soy yogurt and the spices.
- Add the wine and flour mix well, and add most of the sauteed red bell pepper (reserve a few pieces as garnish).
- Shortly before serving, add the apple pieces and allow to slightly soften.
- Saute the spring onion and reserve as garnish.
- Serve the curry over white rice, garnished with a few pieces of red bell pepper and spring onions.
