We enjoyed this tasty salad two weeks ago. It is adapted from a recipe by Elizabeth Karmel called “Edamame Walnut Salad Recipe”, found at Relishmag. Elizabeth had adapted it herself from “Simply Soy”, published by The Soyfoods Council.
It’s very nutritious, full of protein and has a great flavor as well. We are not able to get edamame here, so we enjoyed this recipes as a salad with fava beans. It would be good also with limas. I did slightly change the dressing recipe, using walnut oil (to further enhance the walnuts (which I toasted). I also used walnut vinegar, which may be difficult to find, in that case, a white balsamic would be good. I used 1 full teaspoon of grainy mustard and also added some orange juice to the dressing. No matter which beans you use, the edamame, limas or favas, this salad is delicious and easy to make. I do hope you give it a try and enjoy it.
