Review: Mexican Cherry Tomato Salad
We enjoyed this delicious salad tonight. It was very easy to veganize, just using some soy cheese instead of the “Pepperjack” cheese. Otherwise, the recipe is vegan.
It was quick and easy to make and oh so yummy. We didn’t have any black beans on hand, so we used black eyed peas instead. Guess that would make it Southern Mexican. Do give the recipe a try, it’s quite tasty.
